We have been abandoned!

The Hull family sold their home and moved a couple of weeks ago. Those of us left behind have been good at giving the guilt treatment to Erick and Tami. It just won't be quite the same around here without their kids racing up and down the sidewalk with the rest of the crew. My boys are so excited to see them when they come visit this weekend. I think that they have had a long enough vacation and should get their butts back here:(

1st Annual Kiowa Valley Olympics

1st Annual Kiowa Valley Olympics
Date: Aug 25 (Friday) or Aug 26 (Sat)
I was thinking Saturday might be a better day in case we need to start before 6 pm.
So far here are what people have volunteered to be in charge of:

Rob & Lori Burnett: Spitball Archery
Jon & Jenn Barclay: egg walk
Ben & Susan Byerly: 3 legged race ?
Eric & Tami Hull: pie eating contest?
Brian & Andrea Stewart: watermelon seed spitting contest
Steve & DeLana Smith: water balloon walk

Then we can finish the evening off with a potluck bbq and maybe a movie?

Sour Cream Enchiladas recipe

Sour Cream Enchiladas

1 can green enchilada sauce
1 box chicken rice-a-roni
1 can cream of chicken soup
1 can of chicken or 2 chicken breasts, chopped
1 16 oz container of sour cream
1 6 oz can chopped olives (optional)
12 corn tortillas, ripped into bite size pieces
grated cheese to cover top
shredded lettuce (optional)

Prepare rice-a-roni as directed on the box.
Combine sour cream and chicken with rice-a-roni.
In seperate bowl combine enchilada sauce and cream of chicken soup.
In baking dish layer enchilada mix, then rice-a-roni mix, then tortillas. Keep layering like you do a lasagna. Top with shredded cheese. Bake at 350 until cheese is melted. My family likes to eat this with olives on it and lettuce under it. Sometimes we also put salsa on it.

Dutch oven night!

Don't forget to join in on the dutch oven night on Friday, July 14 at about 6:30pm. Bring the usual. Cooking will take place in the vacant lot next to the Smith's. If you don't have a dutch oven and can't find one to borrow, let me know, I'll see if I can scrounge one up for you. I am bringing chicken enchiladas.
